Hi all again!
After my last post on here i discovered that i could infact record the way i wanted to, but i would have to play in 480i (which i refuse to do)
Now i have found a box that allows VGA in, and does multiple outputs!
According to the site, no matter what size resolution is input, the component video out is 480i.
So if i split my VGA output from the xbox, and put it into the box, will i be able to connect a cable straight from the box to the capture card, and it record without problems at 480i, while i still play on the other side of the splitter at 720p. ?

If you connect the vga-cable of your Xbox to this device, and hook up the vga output of this device to your TV/display and the composite output to your capture device, you could in theory play in 720p and capture 480i. But I don't know how the quality will be. The 720p signal is converted to 480i, so I don't know how that will look like, and if text that is optimized is still readable.

You need to test each box to find its flaws or lack of flaws. Assume flaws and have a return path.
Step by Step
1. You need this cable

2. These are the VGA resolutions supported by the XBox360

3. You need a VGA path to a computer monitor at one of the above resolutions and a 480i S-Video downscale for VCR or PC recording.
3a. You can split the VGA with a distribution amp. How were you planning to do this?
3b. You can look for a box with VGA pass-through for the computer monitor and a downscale S- Video for SD recording output.
The Grandview ultimate2000 can be used at 1024x768/60 and the XBox360 can output 1024x768/60 (a bit less than 720p)
This box may "work". The other one may "work" too.
By "work that means it may output some kind of video. Downscaling quality will range from simply tossing pixels (a buzzy mess) to interpolative filtering with analog bandwidth filtering.

Look for reviews. Otherwise buy and return until you find one that is acceptable to you.
PS: Both may or may not work at 50Hz
