hi,
The only thing i can think of...
and assuming you have a head phone jack on the phone...
using a Y connector... one side for your head set and the other for the mic input...!! not sure if the output of the phone jack going to be strong enough... but it a try.. -
SFAIK this is illegal throughout the US unless both parties are aware of, and consent to, the recording. Would not be allowed for use as evidence.
The exception would be to obtain a wiretap warrant. -
I thought that in some areas only one party has to be aware of and consent to the recording, and that it's only illegal for a third party to record without both parties consent. Perhaps our resident legal eagle can clarify it for us.

Certainly fully legal in North Carolina (statute allows for recording if one of the two parties is aware).

Hmm, this may vary state to state. Pretty sure in Ohio there had to be an audible, repeating beep every few seconds. If single party aware, it may be important who is placing the call and who is receiving.
Wonder which state law governs this on a state-to-state call? Sender or Receiver, or wherever the court case is? -
JerryB had the best idea by using the headphone jack and mic input.
As for recording laws in the US check here:

The legality of recording phone messages or even person-to-person conversations varies state by state, because the federal wiretapping act mostly just applies to law enforcement. Here is a good site explaining how the states break down. It's best to be very careful about this. It can be a felony to record someone over the phone without their consent. But if its legal in your state, or if you clearly fall within an exception, than go get 'em.

It's OK if you answer the phone and let the other party know that the call is being recorded though, right?

Yes. If the other party verbally consents than its legal in every state.

It isn't illegal throughout the United States.
See the link provided by adam earlier.
In North Carolina, for example, it is perfectly legal to record a telephone conversation that you are a party to. The other party does not need to be informed that the recording is taking place.John Miller
