What you are probably looking for is to tell them to use the 'finder' to look for the folder and the .pdf and other files. You probably already know that .pdf files are universal and not platform specific. This link might give you a little better idea of the Mac folder structure. http://www.apple.com/macosx/features/finder/
If you had lots of spare room, you could include a copy of Acrobat reader, but most newer versions are bloatware and fairly large, so probably not really necessary. You could just say Acrobat is required to read the files and maybe add a link to the Adobe Acrobat reader web site.
EDIT: I guess a added note, would be to make a demo disc up and find a Mac user or a Mac store and have them try it out to see that the file structure works properly. But most all newer Mac OS's can read most PC type discs, so you shouldn't have to make much in the way of changes between the platforms.
