I have successfully create a couple of VCDs with menus using VCDComposer along with VCDImager and CDRDAO. I understand how to create a menu flow using next, previous, timeout and numeric selections. I am confused about the return and default selection options. When I create them the VCD builds properly, but I can seem to trigger the selections from either my DVD player software or my DVD player. What do the return and default selections corrispond to?

What do the "next" and "prev" settings do?
All it means is that when you press the "next" button on your remote, it goes to what is defined in "next". When you press the "prev" button on your remote, it goes to what is defined in "prev".
The same is for "return" and "default".
If you hunt around your remote control, there will be a button called "return" and and button called "default". Often on DVD player remotes, these buttons are obscured. The "return" button may have its own button with a symbol of a crooked arrow pointing up.
The "default" button is often mapped as the "play" button on a DVD remote.
