What's a good software to rip a DVD that will let me pick which audio stream to rip with it also? ...so that the ripped video file has only 1 audio stream....

Most programs RIP the whole disc. It is the software that you use to copy the disc, after it is ripped, that allows you use to choose which part(s) you want to keep. All of the ones that I have used, allow you to choose what you wanted to keep.
