    Mainly .sub and .srt

Or how do I add a .sub or .srt to the Philips 642/37 DVD Players so it can work and play?

You cannot. Subtitleworkshop deals only with subtitles, it cannot deal with video, only display it.
I think this player can display external subs - so no need to multiplex them in avi.
Your other option is to make .divx file with xsubs. Search the forum for how to make it.

...but I doubt the 642 handles .divx/muxed AVI subs. Best bet is to keep the subs as separate .srt files. You could also use hard subs, which requires reencoding of the AVI, making the overall quality worse, thus best avoided.
