Anyone know if it's possible to just set a solid background colour? In the end I created a single colour jpeg in Photoshop and used that, but I was stumped as how to just specify a colour other than the default black.

Draw a square across the whole background and set it to the colour you want the background to be. If it is the first item you have created, you can use the merge to background option in the Menu menu to make it permenant. Otherwise just send it to the back.
