I would like to know why video files on DVDs are separated into .99GB chunks? Why not just have one large file that contains all of the video file?

The Video DVD standard states that max file size is 1 GB. I think it's a limitation of the file system used.

Yes, DVD-Video predates NTFS, so it's a backwards compliancy thing.
