I have a couple of DVD's which display subtitles regardless of any remote commands. Is there a simple method of disabling the display of those subtitles in the DVD file structure?

While there are DVDs which have selectable subtitles that you can't turn off (that can be fixed by removing the PUOs (Prohibited User Operations)), many more have the subs burned into, or encoded onto, the video. Are you sure which you have? To test, play one of the Vobs (not the DVD, but a Vob), and check. If you see subs, then nothing can be done.
If you don't see any subs, there are several ways to fix it. Here are 2. Open the DVD in DVD Decrypter. Go Tools->Settings->File Mode, and check the 2 Remove PUOs boxes. Decrypt in File Mode and burn back to DVDR. Another is to open the already decrypted DVD (without having removed the PUOs during the decrypting stage) on the hard drive in VobBlanker and Process without doing anything else. It removes the PUOs by default. Near the top you'll see the boxes already checked.
