Is there any information about your system (i.e. dvd writer hardware address, hard driver id, etc) that is copied to the blank dvd when making a backup DVD using say dvdshrink and nero?

There is a selection of information stored, but exactly what is probably dependent on your burning software and your authoring software. Most authoring software will tag the disk with details about itself (advertising, of a sort) and other details. You can see some of this in DVD decrypter's information window. DVD Info Pro can also display a lot of this information.

So the next question is: Is there a way for the information to NOT show up on any of those apps. That is, an anonymously burned disc.
