Sub-title option and menu questions.

I have two questions regarding sub-titles.

1. DEFAULT OFF: After adding a sub-title track to a DVD, how can one make the DVD default to have sub-titles OFF when it is played in the DVD player?

2. SUB-TITLE MENU: When adding the sub-title menu feature, is there any way to have a sub-titles off button (function)?

I couldn't seem to do that, I would like to have the sub-title menu screen have a sub-title on button (which points to the track and I figured that out), and also a sub-titles off button, which would preform the same function as the sub-title button on the DVD remote control.

This question applies to which authoring program??? Your suggestion can be done with more or less all authoring programs, which support subtitles at all, but each one is different...
