How do I adjust the resolution for the video that I'm converting to, using WinAVI Video Converter? Like, if I wanted to use 320 x 480.
Is it also possible to specify bitrate for the video, or does it only let you set the file size, and calculates what to use.

The price of using cheap, one-click tools is a lack on any real control over the outcome. They are cheap and relatively quick because of these limitations.
If you want real control, you need to use real encoders and associated tools, and read up on the guides for them. After a bit it isn't really as hard as it first seemed.
This is a reasonable place to start -> http://members.dodo.com.au/~jimmalenko/AVI2DVD.htmRead my blog here.
