Hey. I'd like to ask if anyone knows what program I should use to extract seperate channels from a DVD so that I can export just the center, rght, left... channels?

All apps that I know of extract full streams which includes whatever combinations of channels it is expected to have.
You must do a multistep process of extracting the streams, decoding if needed and then opening in audio editor and exporting the channel(s) you need.
