Any. The more passes (up to a limit) the better quality at a given bitrate.
You either go "1-pass" only, or "multipass 1st pass", followed by 1-n "multipass Nth pass".

1-pass uses ........ 1-pass. Cannot get any simpler than that.

multipass 1st pass is used 1st when you want to do a 2 (or more) pass encode.

multipass nth pass is used 2nd when you want to do a 2 (or more) pass encode. It must be done after a multipass 1st pass encode, and can be done any number of times after this. The first time you do this you are actually doing the second pass overall, so this is why it's call 2-pass encoding. You can do as many multipass nth pass encodes as you wish after this, with the next one you do meaning you are doing 3-pass encoding, and so on ...

While 1-pass mode is fast and particularly suited to certain situations, multiplass encoding offers more consistent quality by allowing the encoder to first analyse the entire video before encoding it.
