Any specific requirements about how it plays back ? eg:

Do you need a menu ?
Do you want one big clip with chapter points, or are you happy with multiple clips ?

Do all the clips have the same aspect ratio (are they all 16:9 enhanced, or all 4:3) ?
Do they all have the same audio format (eg. all AC3 5.1 or all AC3 2.0) ?

All of these issues will factor into any suggestions.

If you don't need menus, and are happy with multiple titles, then you can do this quickly in DVD Shrink.

If you do need menus, perhaps TDA is a better option.

A few more details will help narrow the field.

Simplest solution, use DVD Shrink to rip the sections you want to your HDD, use TDA to compile them into a DVD with menu. Shrink is free, TDA has a 30 day fully functioning trial.

There are many ways to skin this cat though.
