I personally will never trust the transcoding of any Roxio/Adaptec program like Popcorn, I have stuck with DVD2OneX since it came out and have never been dissapointed, I have also done various tests vs my PC with DVD Shrink and on some discs DVD2OneX does a better job than Shrink with Deep Analysis on so that cemented it for me

Constant is best for animation, or live talking head stuff.
Variable is great for say The Matrix, or Spider-Man 2.
Constant can be, well constant, in quality, but you pay
for it with some artifacting in live action, most noticably
in darkened room/dark background scenes.
Variable always works better by varying the bitrate according to what's on screen."Everyone has to learn, so that they can one day teach."

Yeah I would say variable as well, it tends to be the lesser of two evils though at times it might take a bit longer to get the job done
I have used constant only 2 times and did not like the results either time so I always just keep it on variable
