I have a DVD source that I want to split the audio and video of.
I want to then take the audio from ANOTHER DVD source and mix the 2 together.
Is this as simple as converting the clips to either and AVI or MPEG first, then mixing the 2, then converting back to something burnable to DVD? Or is it a lot more complicated?

You don't need to change the video to avi at all if the audio is the same length. Go to the tools section and look for demux/muxing tools. Demux the video and audio to seperate them, then mux the new audio in with the video.
It becomes more complex if menus etc are involved, but there are guides here for doing it. Look at the guides for IFOEdit for something similar to what you are asking.Read my blog here.
