Is there any software out there that will do on-the-fly transcoding of AVI files (mostly xvid) and serve them as ReplayTV compatible MPEG streams, so I don't need to plan ahead and use extra disk space?
(Or if not, is there anything that will at least go from AVI to ReplayTV compatible/DVArchive importable MPEG in 1 step?)

Looks like the Mpeg2 created by replay is "almost" standard fare. You ought to be able to do it with the command line app FFMPEG, in order to encode your AVIs into Mpeg.
However, look on this sight. It might be more applicable to your situation.
