I thought that would be easy to extract audio tracks but the extensions and structure is not the same as dvd or others I know
Does anyone here knows how to extract sounds or audio from such discs? thanks

Psound (http://snailrush.online.fr/soft/#PSound) can extract audio from PS2 discs
It heavily depends on the compression the audio is in on the disc, and whether or not the audio is streamed off the disc.
If it's streamed, you're pretty much SOL (except for a line-in rip, but that's beside the point). If not, it may be compressed in an archive of some sort.
