I am looking to convert some motion menus and other menus I created into quicktime files so I can use them in my reel. Any idea on programs I could use to even possibly do this live? I am on a mac.

MAC? Forget it. Obsolete technology. I'm surprised it still powers on! Are there still programs written for that boat anchor?

You can extract them using almost any ripper. I use VOBRator to extract them when I need the videos. Once extracted, you will have an .M2V file.
I don't use QT, so getting from the .M2V to QT is not something I can offer advice. You MAY have to convert the video to .AVI format first.ICBM target coordinates:
