I have about 5 different files which I am putting on to 1 DVD I want to keep them as seperate files.
How do I know what bitrate etc. I need to encode them to? In order to fit them all on the DVD?

Add the running length (in time) of all clips, use this sum in a bitrate calculator to get the bitrate. Encode all clips at this bitrate.
