Does anybody know how to increase the volume of a DVD when I copy it?

You cant. You will have to demux the audio, adjust the volume, the remux. How much effort this takes depends on the audio format. Multip-channel (eg AC3 5.1) would have to be broken down to 6 mono wav files. Each would have to be adjusted individually, then reencoded as AC3 5.1, and remuxed into the DVD.
