I have my son's birthday videos all on one DVD I made. I didn't burn it on a DVD yet because it's 7.38 GB. Is it possible to compress it to fit on a 4.7 GB DVD?

YES!
Use dvdshrink.
Be sure to select FULL DISC back up option. Click open files and point it to your authored video_ts folder. Click backup and it will squeeze it to fit on the single layer disc.
