I have a Sony Hi8 DV camcorder and am using Pinnacle v8/v9 to capture the AVI from my Tape.
However the AVI colours always seem a little washed out and not very bright. Is there anything I can do to improve the brightness/ restore the colours.
When watching the movie direct on the camcorder the colours seem ok.

Are you using firewire to capture your video? If so there should be no difference between the video as your just transferring it to your computer similar to copying it from a HD.
What your probably seeing is the difference in your monitor and the lcd screen on the camcorder. Generally it's the opposite and the captures appear darker on monitor but depending on how your monitor is set they could appear washed out if the contrast is turned down and brightness level is high. What I would suggest is burn a test clip to DVD that you can play in your standalone DVD player. Compare how it looks to the same video played from your camcorder on the TV.
