I'm creating a menu in Photoshop using the NTSC profile. It occurred to me that DVD-Lab probably doesn't have support for PS profiles.

I know it imports PSD.
In Photoshop you can either assign a profile to an image or convert it to a profile. I assume that converting it actually changes the colors and assigning it just sets a flag in the file header.
So when you create a new document with the NTSC profile is that the same as an assigned profile or a converted one? -
I haven't worked much with PS in quite a while. I remember I used to edit photos in one color space and then convert it to the color space of the printer prior to printing. That's what confused me, but I see now that it isn't relevant as far as creating menus is concerned.
