Why is one side shiny? What's the difference in the two sides? Are there advantages/disadvantages to each side? Which side should go next to the food? Does it make a difference if you are using it under the food or over the food?
What other interesting uses are there for this stuff?

Hello,
Underside - the smooth side goes next to the food so it can be taken out of the tray easily.

Quick Facts About Aluminum Foil
1. Aluminum is the most plentiful metal in the earth's crust.
2. Foils are flat-rolled products 0.0059 inches or less in thickness.
3. Foil producers process coils of raw product, usually slabs, using a variety of methods.
4. Although aluminum foil is most commonly used, other types of foil can be processed, such as brass, copper, and steel.
5. Aluminum foil has a long life.
6. Pound-for-pound, aluminum covers almost three times more area than tin, and almost four times more than that of lead. -
I'm pretty sure it has to do with the manufacturing process. Both sides are created equally but during the slitting process, one side is in contact with two rolls while the other is in contact with one roll (think: pulley) and the tension is pretty good. So more friction on one side change the color/reflectivity enough that your eyes are seing a difference. Roughly, it's only a cosmetic difference, not a coating or chemical stuff.Originally Posted by tonyiws

I have often wondered what it meant that foil has a shiny side and a dull side. Normally I don't care - whatever side happens to be up then that's it. I have wondered, though.

Do you aussies call it "aluminum" or "aluminium"? Or do you just call it "bauxite"?

I thought I'd ask because Australia has 38% of the world's supply of aluminum. -
I wonder if they pronounce it correctly - al-you-min-ay-um (nudges Cap)
