    What the soft there I've to use to extract specifics chapters?

    dvdshrink will also in reauthor mode

    I would use either smartripper or DVDDecrypter for this job.

    Steps 1 & 2 in this guide step you through how to identify which chapters you need, and how to rip them (and only them) with smartripper. It's probably worth your while to at least read steps 1 & 2. The rest of that guide talks about converting to AVI, which you probably don't need to know about for this particular task.
