I loaded the SVCD NTSC Film template and I need to use ES (Video only), but I can't select it, its greyed out, is there a way to unlock it?

yes! go to load, and find where all the templates are located. There should be a folder called extras, click on it. A file called unlock.mcf, click it and there you go!
