I just got a new computer, so I need to load the latest video codecs for it. I know there used to be a codec pack that had a bunch of the codecs in it. I can't seem to find that, however. Is there one big pack that includes most of the video codecs, or do I just need to look for the latest version of each of them individually?

There are several codec packs which include the most common codecs, usually they are not recommended. Having conflicting codecs can be a frustrating experience. To answer your question, you should only install the codecs that you need to decode your files. Use Gspot or avicodec to test your files and install the audio and video codecs as needed.
