im currently using Sonic Mydvd to make dvds. the flat still picture i used as background gets cut out like one or two inches from the edges. Does anyone have suggestions for great software that is easy to use and have good features on the creative side.

it is the same problems as with your subtitles, it is called overscan. do a search for that on this site and you will get lots of information.

my main question is, what are some great software that is kinda easy to use and has alot of good features on custom menu/ bg building. I especially dont like the buttons on software i use. The stock ones look horrible.

If you don't like them, then the best thing to do is to create the buttons/menus in another program like Zweistein and use DVD-Lab or if you are familiar with AVISynth, use DVDAuthorGUI which will generate a basic menu for you.
