I have a question if I follow sefys guide using clonedvd does that create the whole DVD the extras and menus and stuff?

Yes.
Though with CloneDVD, you can choose to drop extras if you so wish.
BTW, have a look at DVD Shrink. It's freeware and will back up DVDs with a little bit more options than CloneDVD.
