They're all equally a pain in the arse, but the same tools (dvdauthor, mjepegtools, ffmpeg, mencoder, etc.) should compile on all of them.

Gentoo is so much fun to install that you should recommend it to your enemies and other people you generally don't like. Fedora is easy to install, and if you get apt-get installed (theres a kickstart on ATrpms or something) then it doesn't suck quite so much. I don't really have the time or energy to search more, but Fedora has a cool name and logo, and it sounds like something Indiana Jones might like. Any distribution should be acceptable, but it really depends on how much you want to screw with .conf files and other stupid crap. If you want, you could do the 'Linux from scratch' thing, and build your own install, totally. Like, whatever, dude.
If it isn't broken, take it apart and find out why.
