Both Intel and AMD has 64bit processors for a while now, and I wonder if there is any authoring software that utilizes the 64bit processor.

Eventually there will be. But first you need an Operating System that makes use of the 64-bit processor, don't you?
And Authoring is not one of the areas where 64-bits will boost performance, I think. Authoring is mainly about multiplexing video and audio streams and making note of indices on them so that the IFOs can be generated. Mainly a disk intensive job where the more powerful the CPU, the less it is used while it's waiting for the disks to return data or write them.
Get more disks and try to configure the PC so that the streams use more than one disk, if speed is your problem.The more I learn, the more I come to realize how little it is I know.
