I can't give you a specific percentage of how much you should recompress the video, because there really is no magic number. The only rule one should go by is the absolute minimum necessary to fit the content you want to keep into the disc.

Some questions apply to your procedure. How much video is there on the disc? If there's more than two hours, you might do better to split the content over two discs. If the episodes have more than one soundtrack or subtitle stream, removing them is vitally important. Removing the French or Spanish dubs can give you another 300-500 megabytes to fit the video into.

Always remove the copyright messages. These are a waste of space and should have been left out of the specification. You'd think they'd realise by now that the people have these things memorised and don't need to see them anymore. Removing the pieces of video that let you know what studio owns the material or which authoring house made the disc is always a good idea, too.

Without knowing your system specs, I would also recommend making sure that the Deep Analysis option is always checked when you're changing the compression ratio. This helps prevent most of the serious compression artefacts when you're squeezing videos into smaller spaces.
