You could aways add the chapters by rerunning the last couple of steps manually.

Assuming that you still have the .mpg file that the DVD was made from.

Yeah I know... That's what I do... Except I use Chapter Xtractor on a PC to get the chapters off the original

I am trying to do the same thing....add chapters to a mpg or avi movie that I've converted to a DVD (with VIDEO_TS folder). Is there any way to do this without having to pull the movie into iMovie or other type authoring program?
