Adding chapters for dummies?

I have an ATI AIW Radeon 8500 analog capture card and have been capturing MPEG2 via the ATI software (which was recommended), then authoring them with Ulead DVD Workshop. The way that I have been capturing with MMC, the reauthor has the same settings, so there is not much that DVD workshop has to do. I am really confused on how to add chapters and stuff to these already captured videos. I am not in a position to sit and capture 10 minute increments of each 2 hour episode from old vhs tapes, as that would take an enormous amount of time I don't have. Can anyone please explain to someone who has NO CLUE how to add chapters to a capture, yet still have it play as one continuous dvd movie? I also have Adobe Premiere, but don't have a clue how to use it. Thanks again for all the help.

I can't remember if I used to use DVD Workshop or DVD Moviefactory, and it's been a while since I used anything from Ulead, but if I remember correctly, there *should* be an option under the "EDIT" tab for adding chapters.
