I created a DVD and currently have it saved as a VIDEO_TS folder. Later on I realised I'd made the rather foolish mistake of messing the date up that appears on the main menu.
Is there any way I can alter this without having to re-capture the footage and re-athoring it?

You definetely don't need to re-capture or re-encode. You can demux the assets and re-author. Many tools are available that can do this - Vobedit, Vobrator, DVD-Lab, TMPGEnc DVD Author.
Depending on your experince and knowledge of the DVD architecture you don't need to re-author either. If it's just a menu still image you want to modify you can do this (more-less) easily with Vobedit and Menuedit.
