How the heck am I supposed to use the HD-BURN function of my DVD writer?
I feel like a complete newb.. the documentation that came with the writer makes no mention of it, and the software (Nero 5) that came with the drive makes no mention of it in it's help files either.
So, how exactly do I HD-BURN (burn 1.4gigs of data to my 700mb CDR)? with Nero 5?

Did you do a forum search ? This topic has come up a few times recently.
HD burn depends on your authoring software, drive compatibility and the use of specially certified media. If one of these isn't right, it's a no-go.
Don't forget you will likely be only able to read the disc back on the recorder - so don't expect great compatibility and to lose your recordings if that recorder of yours ever packs up and you can't replace it with a comparitive model... -
