taskbar icons & My Recent Documents

It appears that the icons in the start menu come in only 2 sizes (I find one too small and the other too big). How do I set it so that they are to a size I could control?

And in the "My Recent Documents" list, It shows just about everything you recently viewed-- text files, jpeg image files and so on. How can one set it so that it does not show certain files-- (I would like it not to list image files, movie files and music files.
Also, in the "My Recent Documents" when one right-clicks to delete a file sometimes the list stays opened (and one can immediately delete another file) while most of the time the list and the sart menu pull-up close. HOw does one configure windows so that it remains opened until the mouse cursor leaves the pull up menu?

Any adivce would be gratly appreciated.
