I was authoring a DVD, and suddenly the subtitles became green... I have no idea how this happened. Is there any way to change the subtitle color pallette back to black/white?

Yes. With IfoEdit. There's a color table in the .ifo that's usually at 00 00 00 (ifoedit default=green)
00 80 80 is black, FF 80 80=white. Somehow, (IIRC) the first is luma (brightness), then red, then blue. Green is always at 80.
You have to do some trial and error approach. Change all to black first. Then change one of the sixteen colors each time and take a look at how it looks. Repeat until it's like you want it to.
