I have a DVd here that has cantoneese subtitles in the movie but here not part of the DVd.. Can I Remove them?

So long as they are rendered by the player and not part of the video frame, there are a number of ways you can do this.
Since you're asking, I will assume you're new to this and will just suggest what I think is the easiest way.
Get hold of the latest version of DVD Shrink, and import the existing title into the author window. Right click on the main title and select the option words to the effect of "default subtitles" (I'm not in front of a machine with it on at the moment, so I'm working from memory). Select "none" and then "backup".
This should have the desired effect (also good for discs if you want to force different subtitles or closed captions for the foreign language parts of a disc).
