I'm new to backing up DVDs and wanted to know if you have to use a program such as DVD Decrypter to rip the DVD to hard drive before you use DVD Shrink to transcode? Is there a way were DVD Shrink can rip the DVD to file mode? Whats the fastest method?

I was using decrypter to rip the main movie files only. Can I do that with DVD shrink? or do I have to rip the entire DVD? -
You can rip title sets as well as chapters or certain time periods. Check out the "RE-AUTHOR" mode.

next question - this is taking me up to 2 hours to do with my burner (iomege super dvd). Any way to speed up the process.

If you using your burner to rip the dvd, remember most are locked @ 2x when ripping which will slow the process quite a bit.
