I know this problem has been brought up before. The problem is that sometimes when you play a backup DVD on a standalone DVD player the subtitles are on by default, but on the original DVD the subtitles are off by default.
I just wanted to show when this problem happens and when it does not happen.

test DVD - Finding Nemo
programs used - DVD Decrypter 3.1.9.0, DVD Shrink 3.0 beta 5, CloneDVD 1.3.11.2
using DVD Shrink:
full disc backup - subtitles off by default
main movie only backup - subtitles on by default
using CloneDVD:
full disc backup - subtitles off by default
main movie only backup - subtitles on by default
main movie only backup and preserve menus - subtitles off by default

As you can see, the problem only happens if you make a main movie only backup. This type of backup has no menus and begins movie playback as soon as you put in the disc.
Someone here mentioned that the reason this problem occurs is that when you rip the DVD it strips the PUOs, and some of those stripped PUOs had instructions to suppress the subtitles. I believe this to be the case.
But how come it does not happen if you back up the whole disc even though the PUOs are stripped as well? Maybe the main menu has some instructions in it that suppress the subtitles but they are not in PUOs so they do not get stripped.
Also notice the result when you use CloneDVD to back up the main movie only and preserve menus. It has subtitles off by default. So something in the main menu suppresses the subtitles.
So any backup that has the main menu will have subtitles off by default.
So what is the solution to the problem? Right now, the only solution is to use IfoEdit to add a precommand to turn subtitles off.
The following instructions are copied from another thread here:
Open VTS_01_0.IFO (IFO from main movie) in IfoEdit.
Go to VTS_PGCITI and select VTS_PGC_1.
In the bottom window scroll down to the line "There is no PGC Command Table".
Right click on this line and select "Add PreCommand".
You will get a new line: "1.Pre Command".
Right click 1.Pre Command and select "Edit Command".
Select (SetSTN) Set Audio Stream Nr or (SetSTN) Set Subpicture Stream Nr in the picklist and select the desired stream (First stream is always 0, second stream is 1, etc).

Some DVD remotes do not have a SUBTITLES ON/OFF button, only a SUBTITLES button which you use to cycle through the subtitles and after the last subtitle it will turn off subtitles. If your backup DVD has 8 subtitles, you have to press the SUBTITLES button 8 times to turn it off.
I have a Philips DVD 727 and the remote is like that. -

One brand new solution that just popped up today.
Use DVD Shrink 3.1. It lets you set the default subtitle to off. -
