The old Premiere would allow you to type in a specific time and allow you’re to capture that limit. With Pro I don’t see that option? What capture software would you recommend so I can type in a capture time and leave the room?

You can definetely still do it with PP.
Choose File>Capture
Click the logging tab and you will see in the lower right portion of the pop-up window all your settings for selecting time codes. -
I think that only works if the tape has time code. I want to use an analog source and capture with a Canopus ADVC-100. I don't own one yet. Does the Canopus generate time code if I play it though it?

No idea about the capture card but if you were able to do it with P6.5 you will be able to do it likewise with PP.
