I was looking at the audio section of besweet and I saw these two terms. Can someone briefly explain what they are and why I might need these audio formats.

Vorbis is a different type of audio compression, like MP3. It gives higher quality than MP3 at a lower bitrate. It also happens to be free and open source. www.vorbis.com
AAC is .mp4 and, like Vorbis, hits CD quality at 128kbps. Just another way of compressing audio.
Basically, you'd want these if you really wanted to save space when compressing audio. For example, I have 180 or so albums stored on my hard drive to save me carting a load of CDs to uni. I want CD quality so instead of using 160 or 192kbps MP3 I use 128kbps VBR (Variable BitRate) Vorbis. Yields CD quality but saves me space.
