I can get...
Here’s the deal, I’ve got a modded XBOX and am backing some of my favorite movies up and placing them on my box. I’m using DVD Decrypted, then using DVDx to convert it to avi. Right now I have a 720x480 resolution its not the best, so what is the next couple ranges I can convert it into (i.e. 1000x600ish). File size really doesn’t matter...

You are using the max supported resolution for NTSC DVD. A lot of people think increased resolution = increased filesize and quality, this is not the case. The resolution has no bearing on the size of the file. What you need to be looking at is increasing the bitrate to improve picture quality. Remember though that you need a good source to start with. Reencoding a poor quality file with a much higher bitrate and you will just end up with another poor quality file with a bigger filesize.
Edit
Sorry just realised that you are converting to AVI. Does the XBOX play AVI files then, and what codec are you using ?
The statement on increasing bitrate rather than resolution still stands.
