When to Edit?

I am trying to convert DV video from DV camcorder to PC via Firewire, and then eventually to DVD.

Is it better to:

edit the AVI files that are created (before converstion to MPEG)

OR

convert the AVI files to MPEG files and then edit?

Edit the AVI files, then convert to mpeg.
