Re-encoded video onto a ripped DVD?

Hello!
I have seen some groupes who have released DVDR which have been "downsampled"(only the main movie).
Now I wonder, how do I do it?
I want to keep the menus and all the extras(maybe the can be "donwsampled" to), but some subtitles and additional audiotracks I can do without.
What I mean is that I want to re-encode the video(using CCE) but still keep the structure of the DVD.

Untill now I have been using Instant Copy.
