I am trying to use NERO to make a VCD from an MPEG that is 125 minutes. How do I tell NERO that it has to use two disks to burn this MPEG?

Next time encode in 2 or more parts, so that every part will fit on 1 CD-R. Now you have a mpeg, that you want to split. http://www.vcdhelp.com/editmpg.htm
There are very good guide on this site. I am pretty sure, it is a hard work to figure out every detail of a tool and to write a guide. Respect that, read. -
So you have an encoded MPG that's 125min (assume 1250MB) already made? OR you want to encode from a source that's 125min?
If the first, Nero can't do that. Cut the MPEG and burn each piece (click on "Edit" to the left and scroll down to cutting).
If the latter, well same as the above reallyExpect if you are encoding w/ TMPGenc I would use source range to encode only 1/2 the movie and set up batch encoding (scroll down in Sefy's template for more info on setting that up):
