How can I capture a good quality video?

I have a video capture card,it has a tv turner,s-video and rca a/v inputs,I tried already to capture video on all inputs but,when I playback my video file,is to slow and olso I used Ulead studio 7 and windvr3 I can't capture a video file biger than 352x240,I want to capture video like 352X480.if somebody can tell me what software is good for capture video at 352x480(I want to capture video from my satellite receiver it has s-video output)
my pc:
atlhon 1.4 ghz,256 ram/8mb video card.
